Season Turkey with a Spice mixture of Kosher Salt, Black Pepper, Sage, and thyme. Apply Canola Oil all over the Turkey then rub the spice mixture into the meat.
Start turkey out at 500 degrees for 15 minutes. After 15 minutes apply tinfoil to breast tissue, Turn oven temperature down to 320 degrees and continue to cook for 3 hours or until Dark meat temperature is 155 degrees. At that point remove the turkey and place cover or the roasting pan, and let sit for 15 minutes so the juices in the meat will retain when cut into.

I was a Catering Chef for 3 years, and a graduate of Le Cordon Blue School of Culinary Arts :mrgreen:, worst decision ever!
At least I can cook :/
