I want some smoked salmon.. you should come to oregon sammy. We catch the salmon ourselves =D. We get some good runs of salmon here. This year was really bad fish run all around though =/. Hopefully spring run will do better. So I can eat some FRESH salmon =D

LOL Sammy our deli sells smoked fish.Why I do not know but everyone comes to me and I send them off to deli..I can find out for you.I know fresh Norwegianin salmon goes for 7.99 lb the fillets are beautiful. I'd tried to smoke it once but it kept going out on me maybe I need a bigger pipe :lol: :mrgreen:

i love Norwegian salmon.....but i prefer smoked/sliced and not fillets.

Any insider tips fish?
I would like to get to know a local butcher/fishman (sorry I dont know what the fish equivalent is) better as I'm sure they have great tips for certain cuts, whats in season, ideas, etc.

fish mongar....I like that term.

tilapia seems to be cheap easy to cook and very tasty look for a light almost translucent flesh.

My favorite fish of all is the simple Farm Atlantic salmon. Get a center cut season both sides top and skin..put it on tin foil in a pan .Use dry Italian dressing mix OR honey and Cheyenne pepper cook for 8 mins /350 then broil for 2 mins.The top gets crusty- the skin will stick to the foil....a perfect dish add a rice veggie mix to the side and serve with a cold beer like maybe a SAM Adams lager .
